What we are eating this week 3/28-4/3

This week we have 2 field hockey games, soccer practice, house cleaning, power washing, and tattoos scheduled. Busy week and oh it’s a holiday weekend coming up.

Sunday: Beef and Broccoli

Easy peasy. Browned stew meat in skillet with some garlic. Pour some beef stock and cover and let simmer. I then put in about 2-3 tablespoons butter and a bag of frozen broccoli. Cover and stir til broccoli is soft. Toss in some sesame oil and soy sauce and done. Kids had brown rice and hubby and I had with cauliflower rice.

Monday: Cod Fillets with asparagus

I use frozen cod fillets from Butchers Box. Oven at 425 top with squeeze of lemon juice and patted shredded Parmesan. Cut ends of asparagus tossed with olive oil and salt. Bake both for 25-30 minutes. Quick and simple

Tuesday: Skirt Steak tacos

Game day so my trusted slow cooker comes in handy. Again I use butcher box skirt steak toss in Worcestershire sauce , oregano, olive oil, garlic, cumin and garlic. Cool on low then shred. We make our own tacos.

Wednesday: Pork Tenderloin in mustard sauce

Thursday: Take Out night

It is the oldest turn to pick dinner out this week. His favorites are sushi, subs, or Dairy Queen.

Friday: Leftovers

It’s a fend for yourself and clean out the fridge night.

Saturday: Pizza Night

This week I’m making a pesto pizza. I get store bought pizza crusts already baked and spread a layer of pesto sauce then top with thin slices of tomato. Another easy peasy dinner.
