Whats For Dinner This Week?

Hey! Thanks for visiting my page. Been a LONG time but lets get back to it.

If your new here we are a family of 5, with 2 out of state college kids and a 5 year old. Little C is very picky and well limited in his food preferences. We try to get him a bite but, as you may relate to I don’t force the issue. So if he just eats dino nuggets, grilled cheese, spheghetti or pizza I think that is a well rounded diet.

Any way I am a type 1 diabetic so a low carb/keto diet works wonders for my blood sugar. My hubby and I do want to do the usual new year beginnings of lets loose some of this weight. Follow along and hopefully you get ideas for your meals. I’m a non measuring cook, usually just dump what i have or eyeball it. Also on this post there are affiliate links.

MONDAY

Sausage Spinach Soup

I will cut up and ground italian sausage and diced onions (I buy a frozen bag of chopped onions easy peezy) in a pot. Then some garlic and carrots (have a veggie try in the fridge we need to finish and plus it adds color)Add Chicken stock/bone broth whatever i have after. Wait for it to boil, then reduce heat and add a block of cream cheese for some creamy goodness. Throw in handfulls of baby spinich or kale. Done and enjoy!

TUESDAY

Herbed Tilapia with Roasted Asparagus

I grab a bag of frozen tilapia from Harris Teeter (there is 3 fillets in it, perfect for hubby’s lunch the next day) Have the oven @ 420 and on baking sheets i lay the fillets and pour this marinade pop in oven and done about 10 min. I like it overcooked so if you see on my stories, yes i petrified it to my liking. So 10 min should be good for normal doneness.

Same temp in oven i cut the ends of asparagus lay flatly on cookie sheet with foil (easy clean up) and drizzle olive oil and salt. I like the tips brown and crispy and I pretend its french fries.

WEDNESDAY

Steak Bites and Broccoli

I buy most of our meat from Butchers Box – you can save $50 on your first order with this link. Their meats are great, they’re convenient to buy, and they have excellent customer service. For this meal, I use steak tips or beef stew meat, or just chop up some steak into cubes. I cook the meat with a bit of salt and olive oil until it’s brown. Then, I add garlic, sesame oil, and more soy sauce than sesame oil – I don’t measure it out, just use what looks right to me. Next, I toss in some fresh or frozen broccoli, without the stems, in with the meat. I cover it and cook it until the broccoli is soft. You can add sesame seeds on top for a little something extra. We usually eat this dish on its own, or sometimes, if we’re extra hungry, I’ll make some steamed cauliflower rice to go with it.

THURSDAY

This is our take out night since its Hubby’s day off. We try to be good aka burgers with no bun, meat veggies, etc. I will share what we decide that night on my Insta stories.

FRIDAY

We usually call this our fend for yourself night, or freezer meal. Depending on left overs we will eat that or just make a salad or sandwich (Favorite Keto Wrap or Bread )

SATURDAY

Pizza Night! I take a tortilla wrap (Favorite) and place it in a frying pan on high heat with olive oil, flipping it a couple of times until crispy. Be careful as it burns quickly. For oven (broil setting) or air fryer, I top it with cheese and giant pepperonis. Sometimes I add sauce (Yum). Make sure to bring the toppings as close to the edge as possible because the bare areas will burn. Ready in minutes.

SUNDAY

Chicken Alfredo Cassarole

This weekend I will make a big ole pan of this so Leftovers! I usually have cooked chicken made for the week so it can be used for salads sandwiches or something quick in a pinch. Take cut up cooked chicken and season with italian seasoning. Steam a bag of frozen cauliflower in microwave. I use this alfreado sauce and a bag of shredded Mozzerella cheese. For a bit of sauce on bottom of dish and layer half cauliflower, chicken then cheese over and over. Top with last bit of sauce and cheese. Pop in oven @350 til bubbly and browned.
