Hey Friends! Lets find out what we will be eating for this week, including Cinco De Mayo!
Sunday
We had a early dinner out to our local hibachi restaurant, We had spring photo shoot and figured we were all dressed up and why not go out and eat in public for once.
Monday– Shrimp Alfredo
This is a simple easy and family approved dinner. Boiled Fettuccini noodles for the kids in one pot. Threw in a bag of frozen peeled and devined small shrimp in a nother with a pad of butter put the lid on and occasionally swirled them around. When shrimp are pink and curled i kept in a bowl and threw in a couple teaspoons of butter and cream cheese let those soften and added a about 1/2 to 1 cup of heavy cream and whisked till combined. added what Italian shredded cheese I had on hand with salt and pepper and a squirt of lemon juice. I heated up zucchini noodles for hubby and I also.
Tuesday– Chicken Caprise with Roasted Asparagus
Butcher Box chicken breast I like to split so they cook faster. I like to grill in my ninja foodi grill with a splash of Italian salad dressing. when finishing I will top with a slice of Tomato and Mozzerella. Drizzle with balsamic glaze and done.
Asparagus I like to trim ends put on baking sheet covered with alluminum foil and toss with olive oil and sal. Oven at 450 and cook till ends are a bit crispy. (15-20 min)
Wednesday– Table Top Nachos
My daughter requested this after seeing it on TikTok. Have a couple different tortilla chips (scoops, Thin, Normal, and Lime) Cooking Butcher Box Hamburger with taco seasoning, and chicken tenders in slow cooker with taco seasoning also, then shredding. Covering our Dining table with foil and just throwing everything on to become a diy nacho bar. Happy Cinco De Mayo!
Thursday– Take Out Night
Not sure what the plan is or who picks but I’m sure I will know by then. We like to eat out on Thursdays because 1 its my hubby’s day off and Restaurants are less busy.
Friday– Left Overs
It is a fend for yourself night and eat what is in the fridge.
Saturday Pizza Night
Kids have a frozen pizza and hubby and I make a low carb tortilla pizza.
