This week Little C turns 3 on Tuesday! We celebrated with close family members this past Sunday. R’s field hockey season is over, felt good to be back in some sort of normal routine. It will be relaxed this week (lets hope!)
Sunday Pizza
we ordered party sized pizza for the birthday party 1 half cheese half pepperoni, and a white pizza (Delish!)
Monday Keto deconstructed Pork Egg Roll
I use ground pork, browned scramble a egg in middle then add a bag of cole slaw salad mix. Add soy sauce and sesame oil and done!
Tuesday Tilapia with Roasted tomatoes and Asparagus
I use a bag of frozen tilapia fillets, top with cherry tomatoes tossed in olive oil, garlic, salt and pepper and a pinch of red pepper baked in the oven at 425 til fish is flaked and skins on tomatoes are splitting. I Trim the ends of asparagus and also toss with olive oil, salt and pepper in oven with fish in a single layer until ends are slightly crisped.
Wednesday Balsamic Steak and Mushrooms

Thursday Chicken wings and Fries
we usually eat take out on Thursdays but we have eaten so much take out last week :(. Im using Butcher Box defrosted chicken wings in my air fryer and frozen fries to go along. Will either toss wings with franks wing sauce or old bay seasoning.
Friday Leftovers
Friday is a fend for yourself night and eat what is in the fridge.
Saturday Burgers and Hotdogs
Hubby and I are hopefully in good shape after our 2nd vaccine and will grill.
